TRADITIONAL HOME REARED LAMB
Breeding combinations are carefully planned as the first and most important step towards producing high quality, lean and flavoursome meat.Our Suffolk x Romney ewes and Beltex rams are responsible for our early lambs which are born inside from early February. Soon after, the hard work starts again as the offspring of our Suffolk x Mules and Charollais rams are born
We finish the lambing season outside in early May when our Romney ewes give birth to lambs fathered by Beltex rams.
Our lamb is butchered by a local butcher having been carefully hand picked to be in the peak of condition. This is done in very small batches which we believe enhances the meat in two important ways- firstly by minimising stress and secondly, it allows us the opportunity to hang it for up to 10 days to allow a succulent flavour and texture to develop- noticeably different from mass produced meat which is usually allowed very little time to mature

In the Farm shop we offer a choice of boxed whole lamb, half lamb as well as a selection of joints and chops.
Half Lamb Box:
1 leg- either whole or 2 half legs Chump chops- 1x 3 chops
1 shoulder- either whole or 2 half shoulders Loin chops – 1 x 6 chops
Best end neck- 1 Whole or 1x 7 cutlets Neck fillets- 1 whole

Finally, just a few words about our pork…
we have always loved having pigs on the farm -every summer we enjoy rearing a few and watching their antics as they wallow and root around (very destructively) in our Christmas tree patch!

We are pleased to introduce our own sausages which we have made to a traditional recipe, including all the lean prime cuts. We think they are delicious and many of you have told us you agree!

AVAILABILITY
Generally, in season we have fresh lamb available at weekends and during the week from our freezer. In order to avoid disappointment and to be sure of getting exactly what you want we ask that you place an order for whole and half lambs- although we usually have a small stock available for spur of the moment buyers.
Our pork production is very relaxed and low key- whenever we have fresh pork and sausages available we advertise it in the Farm Shop and - keep a look out but be warned it’s delicious and supply rarely meets demand! We usually keep a small stock in the freezer.
Our meat is carefully prepared, vacuum packed and labelled by a skilled butcher for your convenience and enjoyment.
Lamb and pork can be prepared for spit roasting by arrangement subject to availability
